A special care is reserved to this ham produced in the Valley of the Great St. Bernard, in the commune of Saint-Rhémy-en-Bosses, the last village in the Valle d'Aosta before the Swiss border.
Salting with salt mixed with spices and local aromatic herbs and seasoning in fresh airy place are the reasons for the savoury, though not salted, taste and for the intense scent of this ham.
We suggest that you serve it finely sliced so as to enhance its fragrance accompanied with slices of farmhouse bread.
Ingredients: pig’s haunch, salt, pepper.
