The Motsetta Valdostana is a product typical of this small and mountainous part of Italy, tightly bound to its food traditions.
Produced from the under rump cut of adult cattle, it is cut and placed lay by lay into a wooden container and covered with salt and spices.
Two weeks later, the pieces of meat are washed and hung in a fresh, dry and very airy place and starting from that moment the motsetta will be ready in a month.
A lean product with a modern taste which does not need any seasoning.
