"Coppa al ginepro" is one of Bertolin's key products. Tender and firm, cylindrical in shape, slightly flattened at each end, it requires accurate trimming and a careful removal of fat.
When sliced it unleashes the unmistakable sweet and aromatic scent of juniper, whose berries have been left to stand for at least 45 days, and which give it an irresistible fragrance and freshness.
After preparation, it is cured for at least five months.
The result is a firm and consistent quality product with a sweet taste which becomes more refined as it matures.
