This smoked mocetta stems from an ancient recipe of the tradition of the Valle d’Aosta.
In all the castles and houses of the Valle d’Aosta, there was a big fireplace for several employments: heating, lighting, cooking and smoking fresh and cured meats, so as to allow their conservation.
This smoked mocetta, produced with the bovine tondino, originates precisely from an ancient recipe of the valley tradition in order to bring back to our tables the tastes of ancient times.
