"Lo Boc" comes from the choice meat of local goats. It is a cooked salami made from different parts of the animal, gristle-free, cleaned of fat and then minced.
Portions of pork shoulder and lard are added (in quantities inferior to the goatmeat). Salt, spices, natural flavours and white wine complete the mixture.
Placed in natural gut casings, "Lo Boc" is then cooked for 8-10 hours at a temperature not above 80°.
The result is a tender and tasty salami, excellent as a starter or served diced in salads. It is sold vacuum-packed.
