Mignons of game are small-sized salami, best eaten fresh. Made from boar, they are made following an antique recipe.
The secret of these unique salami lies in the mixture, where the game content is never less than 50%.
To this pork is added, salt, aromatic mountain herbs and natural flavours. The mignons are then encased, hand tied and sold in 100-gramme vacuum-packs.
They are firm, substantial delicacies with an intense, aromatic flavour, best eaten with a full-bodied red mountain wine.
