The seasoned Mocetta of chamois is a traditional product of the Valle d’Aosta of ancient origins, most likely the most renowned amongst mocetta qualities.

After the fat has been cleaned out, the haunch of chamois is salted with rosemary, laurel, sage, pepper and other local aromatic herbs, before being hung for the seasoning during 5 to 6 weeks in cool places specially prepared by sprinkling the floor with a lay of hay giving off a strong scent of mountain grass and presenting the mocetta with really unmistakable fragrance.

It is perfect when served as an unusual appetizer.

La Motsetta di camoscio stagionata è un prodotto tradizionale valdostano di antiche origini, molto probabilmente la più rinomata delle mocette.
 
La coscia di camoscio, ripulita dal grasso, viene messa sotto sale con rosmarino, alloro,salvia, pepe e altre erbe aromatiche locali prima di essere appesa per la stagionatura di 5/6settimane in ambienti freschi appositamente preparati cospargendo il pavimento con uno strato di fieno che emana un forte sentore di erbe di montagna e regala alla moccetta un aroma veramente inconfondibile.
 
Perfetta per essere servita come  particolare antipasto.
 
 
Ingredienti: carne di camoscio, sale, aromi naturali.
