"Motzetta", cured beef, horsemeat, chamois-goatmeat, venison or boar, is prepared with meat cut only from the leg.
The taste is enhanced by the addition of mountain herbs, salt, spices and other natural flavours.
The meat is left with these ingredients to marinate for at least twenty days before being cured for a period which can vary between one and three months, depending on size.
It is considered a real delicacy, ideal as a starter, needing no seasoning as its taste, brimful of local aromas, is complete in itself.
Motzetta is sold vacuum-packed.
