A very particular marmalade with an intense taste that preserves the perfume of this fruit and reminds Sicily.
Apart from the most spread fruit, that daily arrives on our table according to the period of the year, we have to consider many other fruits, “minor" or “secondary” fruits, less cultivated or spontaneously ripped. Among these we have undoubtedly to mention the bitter orange, a plant coming from China and North East of India, bring to Europe from Arabs in the X century.
At present it is cultivated in the South Europe and in other sub tropical areas.
Its fruit has a smooth peel, little shagreneed and of an intense orange colour, sometimes red, an acidulous and bitter taste, completely different from the common sweet orange and, exactly for this reason, is mainly used in confectionery and liquors production.
Ingredients: fresh bitter oranges * 50%, cassava syrup* 49%, fresh lemon juice* 1%, jelly: fruit pectin, peels of fresh orange pieces.
